HOW TO PREPARE MKATE WA MAYAI
Ingredients
· ¼ kg wheat flour
· 5 eggs
· ¼ kg sugar
· 1tsp cadamon seeds
· Vanilla essence (optional)
· Raisins (optional)
Procedure
Pre-heat your oven to 180c.
Prepare your baking pan by greasing it with cooking oil and dust with some wheat flour.
Mix your sugar, eggs, teaspoon of vanilla essence and cardamon seeds in a bowl and beat until all the sugar dissolves or until fluffy.
Gradually add the wheat flour as you mix using a wooden spoon.
Pour the batter into a pan and put in the oven.
Bake for 5mins then remove and sprinkle the raisin on the batter.
Return in the oven and bake for another 20mins or until a wooden skewer comes out clean.
Let the cake cool then run a sharp knife around the edges of the pan to release the cake.
Best eaten while fresh.
Serve with any beverage.
