REFRESHING TAMARIND JUICE
· ¼ tamarind
· ½ sugar
· 2 lit water
· 1tsp ginger
· 1tbsp ground cardamom
· 1 lemon
In a clean bowl, soak the tamarind in half a litre of warm water for about 20mins.
With clean hands, squeeze the tamarind to remove the seeds and fibres.
Add more water and sieve the juice into another bowl before adding the other ingredients.
Add your sugar, ginger and ground cardamon to the extracted juice and whisk until all the sugar dissolves.
Squeeze your lemon over the juice and sieve once again.
