Forget “Pilau Njeri” this is how you make tasty Swahili Pilau

·       1kg rice
·       ½kg sliced beef or goat meat washed
·       ¾ cup cooking oil
·       2 peeled medium size potatoes cut into chunks
·       2 large onions cut into thin slices
·       2  fresh tomatoes diced
·       4 pieces crushed garlic
·       1 tsp crushed ginger
·       2tbsp ground pilau masala
·       Salt
·       2 royco cubes
·       Water

Heat oil in a sufuria then add the chopped onions and fry until golden brown.

Add pilau masala, garlic and ginger paste to the onions  stir for a while then add in the sliced meat.

Add royco cubes and some salt to taste then stir until well combined with the meat, add 2cups of water, cover and let the meat cook until tender.

Once the water dries out, stir for 5mins so that the meat fries in the masala mixture then add tomatoes and stir until thick then put potatoes and stir again.

Add 8cups of water to the mixture then let it boil boil.

Add rice  and stir, cover and let simmer for 30mins or until well cooked.

Remove from heat and set aside to cool.

Serve with kachumbari and cold juice.
