· 4 eggs
· 1 finely chopped onion
· 1 fresh chopped tomato
· 1 chopped green chilli
· ½ chopped pepper squash
· Cooking oil
· Shredded cheese
Beat your eggs and set aside.
Smear a half tablespoon of cooking oil on your pan and shallow fry your chopped tomatoes,onion,pepper squash and green chilli for about 5mins.
Add salt to tatste as you stir your mixture.
Reduce the heat and pour in the beaten eggs over the mixture and cover for another 2mins.
Add shredded cheese over one side of the omelet and let it melt.
Run a sharp knife around the edges of the pan to release the omelette.
flip the side of the omelette with no cheese over the side with cheese then remove from heat.
Serve with bread.
